*Vegan* Chocolate Chip Peanut Butter Cup Cookie Recipe!

This is one of my easiest recipes to date because all I do is dump it in a bowl, mix, put it on the baking sheet and pop it in the oven! Its the quickest homemade treat! The kids can easily help and make this a fun time instead of a more...well..stressful time lol! We have 6 kids and 5 of them are 5 and under so this makes us have a super fun and crazy house! These cookies add deliciousness to the fun :)

Ingredients


  1. 1/3 cup unsweetened applesauce (this acts as the "egg" in the mixture)

  2. 1/2 cup of coconut oil

  3. 1 cup brown sugar

  4. 1/4 cup cane sugar

  5. 2 tsp vanilla extract

  6. 1 1/2 cups flour

  7. 1 tsp baking soda

  8. 1/4 tsp salt

  9. 1 cup non-dairy chocolate chips

  10. 1/2 cup non-dairy peanut butter chocolate cups (frozen and chopped) *I use Unreal Vegan Peanut Butter Cups*


Directions


  1. Preheat oven at 350 F

  2. Mix all ingredients in the bowl except the chocolate chips and peanut butter chocolate cups

  3. Fold in chocolate chips and peanut butter chocolate cups

  4. Roll dough into small balls and place on greased cookie sheet

  5. Bake for 10 mins

  6. Enjoy!


*I recommend baking all of the dough at once, the coconut oil does not do well cooled and reheated. You will have flatter cookies but still yummy! Use vegan butter to prevent this effect.*
